Honey Joys (or sometimes know as Honey Crackle) is a delightful, easy treat which is super easy to make and takes no time at all. With only six ingredients and ten minutes in the oven, they are perfect to make with the kids.
INGREDIENTS
Makes 12
90 grams unsalted butter
55 grams [¼ cup] caster sugar
2 tablespoons honey
¼ teaspoon salt
1 teaspoon vanilla extract or paste
100 grams [4 cups] cornflakes
METHOD
Preheat your oven to 150C [300F]. Line a twelve capacity muffin tin with cupcake baking papers (that measure 4 centimetres across the base). Set aside.
Melt butter, sugar, honey, vanilla and salt in a small saucepan over medium heat until it reaches a frothy boil. Immediately remove from the heat.
Pour the butter and sugar mixture over the cornflakes and mix until completely coated.
Using an ice-cream scoop or a tablespoon, divide the mixture evenly into the twelve cupcake liners.
Bake in the oven for 10 minutes before setting aside to cool.
STORAGE
Store in an airtight container in the refrigerator for up to a week.
TIPS + TRICKS
You can add peanuts as a variation - also super delicious.
If you do not have honey, you can always replace with golden syrup.
