My favourite kind of recipe - a melt and mix! A classic Mars Bar slice. This slice is ridiculously easy to make and the only thing that takes time is waiting for the Mars Bars to melt into the butter and golden syrup. 

This is a goodie! 

 

INGREDIENTS

Makes 16

3 Mars Bars - 160 grams

75 grams unsalted butter

2 tablespoons golden syrup

Pinch of salt

105 grams [3 cups] rice bubbles


300 grams milk chocolate

25 grams unsalted butter - melted

 

METHOD

Butter and line a 20 x 20 centimetre square tin with baking paper. Set aside.

Chop up the Mars Bars into small pieces before adding to a medium saucepan with the butter, golden syrup and a pinch of salt. 

Melt over a low heat, consistently stirring, until the mixture is smooth. (It may look like the Mars Bars will not melt but they do!) It may take 4-5 minutes! 

Stir the Rice Bubbles evenly through the chocolate mixture before pressing firmly into the lined tin and smoothing with a knife or offset spatula. Place in the refrigerator for at least 1 hour. 

Melt the milk chocolate in a heatproof bowl over a saucepan of simmering water. Alternatively, melt in the microwave for 2-3 minutes on medium, stirring every 30 seconds. Add melted butter and stir until smooth.

Spread the chocolate evenly over the slice with an knife or offset spatula and refrigerate until firm before cutting into squares. 

STORAGE

Store in an airtight container in the refrigerator for up to a week. 

TIPS + TRICKS

It is important to melt the Mars Bars, butter, golden syrup and salt on low so the chocolate will not burn. Slow and steady wins the race in this instance!
