I love everything about Christmas - the lights, tree, family and most of all treats! If you have never had White Christmas before, it is a lovely blend of white chocolate, coconut, milk powder and nuts with absolutely no cooking required. Just melt and mix! So if you need a hostess gift or just want something sweet to serve during the holiday season - this is the recipe for you!

So, let’s get melting!  

INGREDIENTS

Makes around 16
(depends on how large you cut them)

60 grams puffed rice

60 grams dessicated coconut

90 grams milk powder

50 grams mini marshmallows

60 grams dried cranberries

100 grams pistachios

400 grams white chocolate

METHOD

Line a square 20 x 20 baking tin with parchment paper. Set aside.

Mix together puffed rice, coconut, milk powder, marshmallows, cranberries and pistachios in a bowl and set aside.

Melt chocolate in a heat proof bowl set over a saucepan of simmering water until melted. Alternatively melt the chocolate in a microwave for 2 -3 minutes, stirring every 30 seconds. Set aside and allow the mixture to cool for 5 minutes.

Pour the melted chocolate over the dry ingredients and mix together until combined.

Gently press the mixture into the baking tin and decorate with your favourite sprinkles - I tend to use silver cachous.

Chill for 4 hours or until set. Cut into squares to serve.

STORAGE

Store in the fridge for up to a month.

TIPS + TRICKS

If you are not a fan of pistachios or cranberries, you can use your own customise your own version by using your favourite nut and/or dried fruit. Roast almonds, cashews, cherries, dried apricots or even turkish delight - the options are endless.

Allergies? If you would not like to use nuts, then crushed up chocolate biscuits is a great alternative.

Toasting the coconut can also add a lovely nutty flavour to your White Christmas. Just place the coconut in a thin layer on a baking tray and bake in the oven for 5 - 10 minutes @ 160 C - until lightly golden.
